Tasting Note
Pale ruby; highly aromatic red cherry, maraschino, orange oil and mulchy earth. Light-to-medium body with sappy amaro, red cherry compote, chalky grip and sinewy, persistent tannins leading to a savory, elegant finish.

Western: roast duck, mushroom risotto, pork belly, roast chicken, salmon. Asian: Peking duck, char siu (BBQ pork), miso-glazed salmon, teriyaki chicken, soy-ginger pork, mushroom hot pot.

Production Method
Estate/farmed Yarra fruit; partial whole-bunch fermentation (approx. 30–35%), native yeasts, ~14–16 days on skins, matured 8–10 months in old small oak, minimal intervention, no fining or filtration.
