Tasting Note
Bright, saline-driven Chardonnay: lemon and lime zest, yellow apple, oyster-shell minerality, subtle toast and lees complexity. Light–medium body, high fine acidity, herbal spearmint notes and a long savory finish.

Food Pairing
Western: oysters, grilled prawns, lemon-roast chicken, creamy seafood risotto, goat cheese. Asian: sashimi/sushi, steamed fish with ginger & scallions, Vietnamese-style prawn salad, mild Thai green curry.

Production Method
Hand-harvested cool-climate fruit; destem/crush then press; wild-yeast fermentation in small, old oak; 9–11 months maturation on lees in neutral small oak; minimal fining, sterile filtration.
