Tasting Note
Bright citrus and stone-fruit — preserved lemon, green apple and yellow peach — with chalky minerality, subtle marzipan and gentle toast. High, fine acidity yields a saline, talcy texture and a focused, long saline finish.

Food Pairing
Western: oysters, scallops, lobster, roast chicken, pork belly, creamy pasta. Asian: sushi and sashimi, tempura, steamed fish with ginger & scallion, miso-glazed salmon, dim sum.

Production Method
Destemmed, crushed and immediately pressed; wild/native yeast fermentation; matured ~9–10 months in small seasoned/old oak barriques; minimal intervention, no fining, sterile filtration before bottling.
