Tasting Note
Lively citrus (lemon, lime) and green apple with jasmine florals, wet-stone minerality and a subtle off-dry sweetness. Racy acidity gives precision and a long, saline finish.

Oysters, sashimi, grilled prawns, roast chicken, pork belly, goat cheese; Asian: sushi, sashimi, dim sum, Thai green curry, Vietnamese spring rolls, Sichuan-style spicy dishes.

Production Method
De-stemmed and crushed then gently pressed; fermented on fine lees (indigenous yeasts) in stainless-steel with some large/old oak influence and bottled after sterile filtration. Minimal intervention.
