Tasting Note
Perfumed red fruits (raspberry, cherry), rose petal and blood orange with earthy rhubarb, savory herbs and spice. Bright acidity, talc-like fine tannins and a complex, savory-spiced finish (coriander, cardamom).

Western: roast duck, pan-seared salmon, mushroom risotto, pork belly, roasted lamb. Asian: Peking duck, char siu (BBQ pork), miso-glazed salmon, shiitake-bok choy stir-fry, ramen with braised pork.

Production Method
Hand-harvested; wild-yeast fermentation with ~20% whole-bunch; cold soak and ~16–18 days on skins in concrete/open fermenters; matured 11–14 months in seasoned small oak; unfined, unfiltered.
