Tasting Note
Pale pink and lively. Crushed sour red berries, fresh strawberry and cherry, herbaceous lift, mouth‑watering acidity, savory tannins and a saline sour‑plum finish. Very moreish.

Food Pairing
Western: roast duck, pork belly, grilled salmon, mushroom risotto, charcuterie. Asian: teriyaki or miso salmon, Korean BBQ, spicy Thai larb, sushi (medium‑fat tuna), yakitori.

Production Method
Hand‑harvested Willowlake fruit. Mixed techniques (precision destem, whole‑bunch, extended skin maceration, elevated temperature ferments). Wild yeast, matured in small and large old oak for ~5 months; unfiltered/unfined.
