Tasting Note
Dark black-fruit core (blackberry, cassis) with peppery garrigue, graphite and smoked-herb notes. Medium–full, sappy palate with ripe fruit, savory spice and fine tannins; fresh mineral lift and a long, savory finish.
Food Pairing
Western: roasted lamb, braised beef, duck confit, aged hard cheeses. Asian: Korean BBQ (bulgogi), Sichuan-style beef, Cantonese char siu, grilled yakitori and rich hot-pot dishes.
Production Method
Hand-harvested, 100% destemmed; long maceration (~4+ weeks) with pigeage; aged roughly half in tank and half in oak (large and small casks); organic/biodynamic viticulture.
