Tasting Note
Deep garnet; black cherry, blackberry and plum with garrigue, violet, black pepper and wet stone. Medium-full bodied, savory minerality and moderate tannins, long mouthwatering finish.

Western: roast beef, ossobuco, lamb, grilled sausages, aged sheep cheese. Asian: Korean BBQ (bulgogi/galbi), Szechuan beef, charred pork skewers, fragrant tomato-based North African/Middle Eastern dishes.

Production Method
Hand-harvested, fully destemmed; ~4 week maceration with gentle extraction. Aged mainly in concrete vats with a small portion (≈10%) in oak; biodynamic farming practices.
