Tasting Note
Intense black-fruit core (blackberry, blueberry) with cocoa, tobacco, vanilla and warm spice. Full-bodied, silky yet firm tannins, lively acidity and a long, mocha-tinged, persistent finish.

Food Pairing
Western: grilled or roasted red meats (steak, lamb, venison), mushroom risotto, aged cheeses, pappardelle al cinghiale. Asian: Korean BBQ, teriyaki beef, char siu, Sichuan-style beef, duck with hoisin.

Production Method
Fermentation in concrete at controlled temperature, extended skin maceration, malolactic in oak; aged c.24 months in French oak barriques (majority new).
