Tasting Note
Deep purple; aromas of black and red cherry, violets, cocoa and spice. Full mid-palate of blackberry and plum, lively acidity, velvety fine tannins and a long finish with espresso and dark chocolate notes.

Western: grilled steak, lamb chops, venison, pork shoulder, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), char siu, spicy Sichuan beef, teriyaki beef skewers, hoisin-glazed duck.
Production Method
Hand-harvested from old ungrafted Uco Valley vines; traditional flood irrigation. Fermented and matured 12–14 months in French oak (approx. 35% new) before bottling.
