Tasting Note
Dense, inky Petite Sirah showing blackberry, blueberry, dark chocolate, espresso and cracked black pepper. Full-bodied with ripe, firm tannins, cocoa and toasted oak notes, subtle herbal lift and a long earthy finish.

Western: grilled ribeye, braised short ribs, roasted lamb, barbecued brisket, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese char siu, spicy Sichuan beef, beef teriyaki, mushroom hot pot.
Production Method
Hand-harvested and sorted; short cold soak followed by fermentation with punch-downs and rack-and-returns. Aged ~16–18 months in French oak in small-lot Cellar No.254 program.
