Tasting Note
Ripe pear, white peach, orange oil and honeyed pastry notes; satiny medium–full body with bright, racy acidity, subtle oak spice and a mineral, saline finish.
Food Pairing
Western: roast chicken with cream sauce, lobster with beurre monté, mushroom risotto, aged Comté. Asian: miso-glazed black cod, seared scallops with soy-butter, tempura, steamed fish with ginger and scallion, Thai green curry (milder).
Production Method
Gentle pressing, barrel fermentation (approx. one-third new French oak), aged ~15 months on fine lees with light batonnage; minimal filtration.
