Ripe red and black cherry, plum, red currant with hints of orange rind, cocoa and tobacco. Medium–full, velvety texture, fine-grained tannins and bright freshness finishing long and slightly spicy.
Food Pairing
Western: roast beef, braised lamb, duck confit, mushroom risotto, aged cheeses (Epoisses, Comté). Asian: Peking duck, char siu, Korean BBQ short ribs, soy-braised beef, mushrooms with miso or teriyaki-glazed dishes.
Production Method
Hand-harvested, gentle vinification with short cool pre-fermentation maceration; aged 15–18 months in oak (limited new oak/use of foudres); bottled with minimal intervention, often without fining or filtration.
