Tasting Note
Ripe red and black cherries, plum, violet and crushed granite; hints of spice, earth and subtle oak. Medium-to-full-bodied with bright acidity, supple dusty tannins and a long mineral finish.
Food Pairing
Western: roast duck, lamb, grilled bavette/steak, mushroom gratin, charcuterie and aged Tomme/St. Marcellin. Asian: Peking duck, char siu, Korean BBQ (bulgogi), braised pork belly, mushroom hotpot or soy-braised dishes.
Production Method
Hand-harvested old-vine Gamay; destemmed, cold-soaked, ~18-day fermentation with gentle extraction; aged 12–18 months in 228L/500L French oak with limited new wood. Lutte raisonnée and minimal intervention.
Vineyard Info
Domaine Louis Boillot (Chambolle‑Musigny) bottles Cru Beaujolais from older Gamay vines. Louis Boillot emphasizes low-intervention viticulture and Burgundian precision; Vieilles Vignes sourced from ~50-year-old parcels near the windmill.
