Tasting Note

Ripe, floral Pinot Noir with red and black cherry, raspberry, cassis, orange zest, violets and subtle baking spice. Medium–full, succulent palate with bright acidity, silky tannins and a stony, savory finish.


Food Pairing

Western: roast duck, beef bourguignon, mushroom risotto, grilled salmon. Asian: Peking duck, char siu, miso‑glazed fish or aubergine, shiitake ramen, teriyaki salmon.


Production Method

Hand‑harvested fruit; cold pre‑fermentation maceration, gentle fermentations, 15–18 months in French oak (≈20–30% new). Minimal intervention; often bottled unfiltered.

Domaine Louis Boillot (est. 2002) split from Lucien Boillot; works small, old‑vine parcels (avg 50–70 years) across Gevrey‑Chambertin. Louis and partner Ghislaine Barthod run winemaking; son Clément assists.
