Tasting Note
Cherry and black-berry fruit, coniferous forest-floor and baking spice; medium-bodied, lively acidity, velvety, melting tannins and a chalky, mineral finish.

Western: roast lamb, duck breast with cherry sauce, mushroom risotto, charcuterie and soft cheeses. Asian: Peking duck, char siu (barbecued pork), miso-glazed salmon, mushroom soba, teriyaki pork.

Production Method
Hand-harvested Pinot Noir; cold pre-fermentation maceration, gentle extraction, partial destemming; aged ~15–18 months in French oak (up to ~30% new); low-intervention viticulture.

Domaine Louis Boillot (est. 2002) farms ~6–7 ha in the Côte d'Or. Known for old vines, careful low-yield viticulture and minimal-intervention, traditional Burgundian vinification alongside Ghislaine Barthod.
