Tasting Note
Red cherry and raspberry lead, with forest-floor, iron and baking-spice notes; savory, mineral mid-palate, fine-grained tannins and bright acidity, finishing slightly smoky and persistent.

Food Pairing
Western: roast duck, coq au vin, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu, soy‑glazed salmon, mushroom soba, miso ramen.

Production Method
Hand-harvested Pinot Noir, destemmed with cool pre-fermentation maceration, gentle extraction; aged ~15–18 months in French oak (c.20–30% new); bottled without fining/filtration.
