Tasting Note
Mature Pinot Noir showing red cherry, raspberry, dried cranberry, earthy mushroom, leather and forest-floor notes with gentle spice; medium body and savory, slightly tertiary finish.

Western: roast duck, beef bourguignon, mushroom risotto, roasted chicken. Asian: Peking duck, miso-glazed salmon, char siu, grilled yakitori or bulgogi.

Production Method
Hand-harvested Pinot Noir; cold pre-fermentation maceration, gentle extraction, élevage 15–18 months in barrels with limited new oak and minimal filtration.
