Aroma of dried cherry, red raspberries, cedar, leather and spice; silky mid-palate, firm refined tannins, vanilla and tobacco notes with a long spicy finish.

Western: roast lamb, grilled steak, aged cheeses, Iberian/serrano ham. Asian: Peking duck, char siu/BBQ pork, Korean BBQ, braised pork belly, shiitake mushroom hot pot.

Production Method
Hand-harvested; traditional fermentation; aged ~6 years in American oak barriques, racked regularly, fined with egg whites and bottled after extended cellar ageing.
