Tasting Note
Intense golden-yellow; aromas of acacia honey, almond, apricot and stewed peach. Silky, full-bodied and enveloping on the palate with balanced acidity and a long honeyed finish.
Food Pairing
Western: foie gras, gorgonzola and aged cheeses, biscotti, almond or fruit tarts. Asian: mooncake, mango sticky rice, egg tarts, sesame/mochi desserts; also with roasted duck (plum sauce) or rich Cantonese desserts.
Production Method
Hand-harvested Picolit; ~30-day appassimento, gentle pressing; fermentation and ~8–10 months aging in Allier French oak barriques, followed by bottle ageing.
