Tasting Note
Intense golden-straw color. Aromas of acacia honey, almond, stewed peach and chestnut. On the palate it is enveloping, silky, full-bodied and very persistent with delicate spice notes.
Food Pairing
Western: seared foie gras, aged and blue cheeses (gorgonzola), dry biscuits, fruit tarts. Asian: miso-glazed duck, spiced Cantonese roast pork (char siu), sweet-savory Chinese mooncakes, mango sticky rice.
Production Method
Hand-harvested; bunches dried (appassimento) ~30 days. Gentle destemming and soft pressing; fermentation and aging in French (Allier) oak barriques for ~8–10 months, then bottled and further aged.

Produced by Aziende Agricole Livon (family-owned since 1964) from the Cumins cru in Ruttars, Dolegna del Collio; known for Collio cru bottlings and recovery of local varieties.
