Food Pairing
Western: roast duck, pork tenderloin with creamed leeks, mushroom risotto, grilled salmon. Asian: miso‑glazed cod, hoisin/char siu duck, teriyaki chicken, shiitake soba or gyoza with soy‑ginger dipping sauce.
Production Method
Organically/biodynamically farmed fruit; native-yeast fermentation in small open-top vats; matured ~16 months in French oak (≈25% new); bottled unfined and unfiltered.
Vineyard Info
