Tasting Note
Citrus and white peach with lemon confit, green apple, saline minerality, hazelnut/toasty oak and sweet herbs. Medium-bodied, vibrant acidity and silky texture with a long, precise finish.

Food Pairing
Roast chicken, mushroom risotto, grilled pork, creamy pasta, seared scallops, crab or lobster (western); miso-glazed cod, tempura, sushi (fatty tuna), soy/ginger seafood, yakitori (Asian).

Production Method
Biodynamically-influenced farming, hand-harvested fruit, whole-cluster/whole-bunch gentle pressing, native-yeast barrel fermentation and sur-lie aging in French oak (moderate % new); minimal intervention.
