Tasting Note
Pale yellow; aromas of citrus, white flowers, passion fruit, pear and toasted hazelnut. Round, fresh palate with pink pomelo and saline minerality; medium body, bright acidity and persistent finish.
Food Pairing
Western: oysters, ceviche, grilled sea bass, roasted chicken, goat cheese, creamy pasta. Asian: sashimi/sushi, steamed fish with ginger, tempura prawns, mild Thai or Vietnamese seafood dishes, light laksa.
Production Method
Hand-harvested from selected gravelly-sandy plots. Fermented in temperature-controlled vats and French oak; aged ~6 months with a split between tank and barrel (portion in new oak), lees stirred periodically.
