Tasting Note
Aromas of blackcurrant, blackberry, violet and graphite with cedar, dark chocolate and spice. Medium–full-bodied, silky yet firm tannins, concentrated fruit and a long, mineral-tinged finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef stew, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan-style beef with moderate spice.
Production Method
Traditional Bordeaux vinification—temperature-controlled fermentations, maceration and élevage ~18–20 months in French oak (c.80% new). Harvested mid–late September, bottled following élevage.
