Tasting Note
Perfumed and concentrated: plum, blackberry and cherry with rose/violet, clove and eucalyptus; elegant, ripe fine-grained tannins, vivid acidity and a long, perfumed finish.

Food Pairing
Western: roast lamb, beef short ribs, duck confit, mushroom risotto. Asian: Peking duck, Korean BBQ (galbi), braised beef with soy and star anise, shiitake-based stir-fries.

Production Method
Cold maceration; fermentation in stainless steel and wooden vats; malolactic in barrel; aged ~18 months in ~80% new French oak.
