Tasting Note
Ripe black cherry and blackberry with black pepper, oak spice and distinct volcanic minerality (spilite). Full-bodied, structured and savory with ripe, fine tannins and a long, elegant finish.

Food Pairing
Western: grilled rib‑eye, roast lamb, herb‑crusted beef, mushroom ragu, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), spicy Szechuan beef, Korean braised short ribs (galbi-jjim).

Production Method
Hand-harvested; few days cold maceration, soft pressing; indigenous yeast fermentation, complete malolactic; aged ~12 months in used French oak barrels; estate in organic conversion, minimal intervention.
