Tasting Note
Concentrated blackcurrant and blackberry with cedar, tobacco, menthol and pencil‑lead notes. Medium‑full body, grainy yet ripe tannins, fresh acidity and toasty oak leading to a long, mineral finish.

Western: grilled ribeye, roast lamb, braised beef, beef bourguignon, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, Chinese red‑braised beef, mushroom hotpot.

Production Method
Parcel‑by‑parcel vinification in temperature‑controlled stainless steel; malolactic in tank; optical sorting; ~12 months ageing in French oak (≈45% new).
