Tasting Note
Ripe black cherry and plum with black truffle, violets, tobacco, black olive and cocoa. Silky, concentrated palate with polished powdery tannins and a long, savory finish.

Roast lamb, grilled ribeye, beef short ribs, mushroom risotto, aged hard cheeses; Peking duck, char siu, Korean BBQ, braised beef noodle soup, savory mushroom and soy stir-fries.

Production Method
Hand-harvested Merlot with small Cabernet Franc lots; fermented in concrete vats and matured in French oak barrels (fraction new) for ~12–18 months; conventional viticulture.
