Tasting Note
Medium–full-bodied white with ripe peach, apricot, melon, lemon rind and honeysuckle; waxy/beeswax texture, toasted brioche and gentle oak spice, with stony mineral notes and bright acidity on a long finish.

Western: roast chicken, grilled sardines, seared scallops, creamy seafood or poultry dishes, goat cheese. Asian: sushi/sashimi, steamed fish with ginger & scallion, Vietnamese spring rolls, light Thai seafood, Cantonese steamed seafood.
Production Method
Hand-harvested fruit; pressed and fermented mainly in French oak and concrete 'egg' vats, aged ~10–12 months on fine lees with partial bâtonnage and a portion of new oak.

Family-owned since 1987 by the Gervoson family; ~75 ha estate in Léognan (Pessac-Léognan). Known for innovative concrete egg fermenters, terracotta amphorae and traditional barrel aging.
