Tasting Note
Straw-yellow with copper reflections. Aromas of green apple, melon and citrus with light mineral notes. Fresh, zesty palate, medium body and bright acidity, clean finish.

Western: grilled white fish, shellfish, seafood pasta, light salads, goat cheese. Asian: sushi/sashimi, Vietnamese spring rolls, Thai mild seafood curries, Japanese tempura.

Production Method
Organic vineyards; grapes destemmed and softly pressed, static decantation at 9–10°C, fermented with selected yeasts at ≤18°C for ~12–13 days, left on fine lees for several months.
