Tasting Note
Fresh, zesty and straw-yellow with copper reflections; bright apple, melon and citrus with delicate mineral notes and a clean, crisp finish.

Food Pairing
Western: grilled sea bass, seafood pasta, shellfish, salads, goat cheese. Asian: sushi/sashimi, Vietnamese spring rolls, mild Thai seafood dishes, light chicken stir-fries with ginger.

Production Method
Certified-organic grapes; destemmed and soft-pressed, static decantation at ~9–10°C, fermented with selected yeasts at ≤18°C for ~12–13 days, aged briefly on fine lees.
