Tasting Note
Opulent Pomerol: ripe black cherry and plum, violet and cocoa notes, black truffle, saline minerality and mint; silken texture with layered dark fruit and a long, precise finish.

Roast lamb, ribeye or venison; mushroom and truffle risotto; aged hard cheeses (Comté, Manchego). Asian pairings: Peking duck, Korean bulgogi/galbi, Cantonese char siu, beef hot pot, miso-glazed aubergine.
Production Method
Hand-harvested, sorted, fermented in stainless and concrete; matured ~15 months with ~30% new French oak; bottled April 2022 after settling.
