Tasting Note

Dense black cherry, blackberry and blueberry with violets, sandalwood, iron and truffle; powerful yet silky, polished tannins and bright freshness, finishing epically long and perfumed.

Western: roast lamb, beef Rossini, aged hard cheeses, mushroom risotto. Asian: Peking duck, char siu pork, Korean BBQ short ribs, soy-braised beef or umami-rich mushroom dishes.


Production Method

Hand-harvested with meticulous sorting; vat fermentation with extended maceration and aged ~18 months in oak (substantial new oak component), racked regularly before bottling.
