Tasting Note
Classic Pauillac: blackcurrant and blackberry with graphite, pencil lead, cedar, sweet tobacco and menthol notes. Firm, refined tannins with mineral undertow and a long, savory finish.

Food Pairing
Western: roasted or herb-crusted lamb, ribeye, beef Wellington, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, braised beef with soy and star anise.

Production Method
Hand-harvested grapes; alcoholic fermentation in temperature-controlled vats with extended maceration; blended and aged ~18 months in French oak barrels (predominantly new) before bottling.
