Tasting Note
Dark ruby; aromas of cassis, black cherry, pencil lead, violet, cedar and smoke. Flavors of blackcurrant, tobacco and mineral; elegant, medium–full-bodied with refined tannins and a long, saline finish.

Food Pairing
Western: roast ribeye, lamb chops, beef Wellington, venison. Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ beef, rich mushroom stir-fries, miso-glazed aubergine.

Production Method
Hand-harvested parcels vinified separately in wooden vats; malo fermentation followed by ~18–20 months ageing in oak barrels (significant new oak), then blended and bottled.
