Tasting Note
Reserved, elegant red showing blue/black fruits, wild raspberry, white pepper, iodine and dried florals; mineral-driven with silky, fine tannins, bright lift and an extremely long, spicy finish.

Food Pairing
Roasted lamb, grilled pork, mushroom risotto, charcuterie and tapas; Asian pairings: Peking duck, Korean bulgogi, char siu, mushroom ramen, teriyaki chicken.

Production Method
Hand-harvested; spontaneous fermentation with indigenous yeasts in small oak vats; aged ~12 months in large French oak foudres/used barrels; low-intervention, minimal filtration.

Vineyard Info
Ladeiras do Xil (project led by Telmo Rodríguez, Pablo Eguzkiza and Jorge Saa) restores ancient terraces in the Val do Bibei. Organic viticulture, very low-production single-vineyard bottlings from old bush vines.
