Tasting Note
Aromatic Atlantic-style red with wild red berries, forest floor, stemmy herbs, white pepper and dried rose notes. Juicy, high-pitched and medium-bodied with fine tannins, fresh acidity and a saline, persistent finish.

Food Pairing
Roasted lamb, grilled pork, charcuterie, mushroom risotto; Asian: Korean BBQ, char siu, grilled yakitori, spicy Sichuan dishes, mushroom hot pot.

Production Method
Field blend from old terraces, organically farmed; fermented in stainless steel and oak vats; matured 15 months in large 1,500–2,000L oak foudres; bottled July 2023.
