Tasting Note
Bright wild berries, cherry and raspberry with floral and herb notes, wet-stone minerality, light salinity, fresh acidity and fine-grained tannins; medium-bodied and elegant with a persistent, mineral finish.

Food Pairing
Roast lamb, grilled pork, charcuterie, mushroom risotto, duck breast; Asian: teriyaki chicken, Peking duck, Korean BBQ (bulgogi), miso-glazed aubergine, mildly spicy Sichuan dishes.

Production Method
Hand-harvested, spontaneous fermentation with native yeasts in large used French foudres, aged 12–15 months in 1,500–2,000L foudres and some 225L barrels, bottled unfiltered.

Vineyard Info
Ladeiras Do Xil (Telmo Rodríguez project) revived the historic Valbuxán pazo; works with old, organic-certified local vineyards (20–100+ yrs) in O Bolo; small-production single-village cuvée.
