Tasting Note
Perfumed red-fruit core of raspberry, wild strawberry and sour cherry with forest-floor, garrigue herbs, menthol/anise notes, high granite-driven salinity and bright acidity; silky texture and a long, spicy mineral finish.

Food Pairing
Western: roast lamb, grilled pork, charcuterie, mushroom dishes, roasted root vegetables. Asian: Peking duck, char siu, bulgogi (Korean BBQ), yakitori, mildly spicy Sichuan pork skewers.

Production Method
Spontaneous (indigenous) fermentations with whole-cluster elements; matured ~12–15 months in used large foudres and barriques; limited-production bottling.
