Tasting Note
Fresh, mineral-driven Godello: honeysuckle and white flowers, stone fruit (nectarine, pear), bay leaf and citrus zest, saline minerality and a subtle bitter finish; medium–full with ripe, rounded texture and precise acidity.

Food Pairing
Grilled or roasted seafood (scallops, seabass), Basque-style cod, ceviche, roasted chicken, creamy goat cheeses; Asian: sashimi/white-fish nigiri, tempura, mild curries, yakitori, grilled mackerel with citrus.

Production Method
Hand-harvested; whole-bunch gentle pressing; spontaneous fermentation with indigenous yeasts in temperature-controlled stainless steel; aged four months on fine lees in steel; no malolactic; organic, low-intervention winemaking.

Ladeiras do Xil (Telmo Rodríguez project) restores historic Valdeorras sites. Estate vineyards in Larouco (~16 ha), organic farming, mixed bush and trellised vines aged 20–80 years, low yields.
