Tasting Note
Herbaceous and floral: bay leaf, white flowers, stone fruit (peach/apricot), honey and lemon. Granitic minerality, medium-bodied with a velvety texture, bright acidity and a long, saline finish.

Food Pairing
Western: oysters, scallops, grilled/roasted white fish (sea bass, turbot), creamy mushroom risotto, fresh goat cheese. Asian: sushi/sashimi, steamed ginger-soy fish, tempura, Vietnamese/Thai dishes with lime and herbs.

Production Method
Hand-harvested Godello; spontaneous fermentation with indigenous yeasts in stainless steel; aged on its lees ~4 months; minimal intervention; bottled May 2021.
