Tasting Note
Black cherry, wild strawberry, dark berries, white pepper, soy/iodine notes and river-stone minerality; juicy acidity, fine silky tannins and a long saline, spicy finish.

Organic, hand-harvested field blend; indigenous-yeast fermentation in large oak vats (~3,000L) and aged in ~2,000L used French foudre; low-intervention, minimal SO2.
