Tasting Note
Concentrated yet lifted red-fruited core — raspberries, cherry and boysenberry — with white pepper, slate/minerality, herbs and subtle iodine. Silky texture, fine tannins and a long, stony finish.

Food Pairing
Western: roast pork, grilled lamb, duck, mushroom risotto, aged sheep cheeses. Asian: Korean BBQ, char siu, miso-glazed salmon or aubergine, yakitori, teriyaki dishes.

Production Method
Hand-harvested, field-blend grapes fermented with indigenous yeasts in small wooden and stainless tanks, aged ~12 months in large French oak foudres; organic viticulture.

Vineyard Info
Ladeiras do Xil (Telmo Rodríguez project) restored the Falcoeira a Capilla terraces, replanting old head-trained field blends on granitic soils; very small production (≈2,600–3,000 bottles).
