Tasting Note
A textured, dry white with white flowers, aromatic herbs, stone fruit (peach), hay and honeycomb notes, light lanolin and saline minerality, balanced acidity and medium-plus mouthfeel.

Food Pairing
Western: roast chicken, grilled sea bass, scallops, creamy goat cheese. Asian: sashimi/sushi, tempura, miso-glazed cod, light Thai or Vietnamese seafood dishes.

Production Method
Hand-harvested, organic; spontaneous fermentation with native yeasts in new/used French oak barrels and foudres; aged ~10 months; minimal intervention, fined with isinglass, bottled with little/no filtration.
