Tasting Note
A textured, medium‑full white with citrus zest, green apple, white flowers, herbs, honeycomb and flinty, saline minerality. Rounded palate, bright acidity and a long, salty finish.

Western: oysters, grilled sea bass, roast chicken, pork, creamy cheeses; Asian: sushi/sashimi, grilled mackerel, Vietnamese spring rolls, milder Thai curries.

Production Method
Hand‑harvested; spontaneous fermentation with indigenous yeasts in new and used French oak barrels and foudres; aged ~10 months; low‑intervention; fined with isinglass and bottled unfiltered.
