Tasting Note
A textured, medium-bodied white with white flowers, aromatic herbs, peach, hay and honeycomb notes, subtle lanolin and a mineral, slightly bitter finish. Elegant and restrained with balanced acidity.

Food Pairing
Western: grilled/roasted white fish, shellfish (scallops, langoustine), roast chicken, soft goat cheese. Asian: sushi/sashimi, Thai coconut fish curry, grilled mackerel, Korean seafood pancakes.

Production Method
Organic, hand-harvested field blend. Spontaneous fermentation with indigenous yeasts in new and used French oak barrels and foudres, aged ~10 months, minimal sulfur, fined with isinglass and bottled with no filtration.
