Tasting Note
Fragrant red with wild forest fruits, violets, subtle white pepper and granite minerality. Silky, very fine tannins, bright acidity, medium body and a long, elegant finish with Atlantic freshness.

Food Pairing
Western: roast lamb, grilled beef, mushroom risotto, pork belly, aged Manchego. Asian: Peking duck, Korean BBQ, char siu, spicy Sichuan beef, teriyaki chicken, grilled shiitake skewers.

Production Method
Organic, hand-harvested field blend from old terraces. Native-yeast fermentations in small vats; aged 12–15 months in large French foudres and used oak with minimal intervention.
