Tasting Note
Concentrated black- and red-fruit core (blackberry, cherry) with garrigue, spice, candied lavender and smoked-mineral accents. Lush yet energetic, with chewy powdery tannins and a long, spice-driven finish.

Food Pairing
Western: roast lamb, braised beef, game (venison), aged hard cheeses. Asian: Peking duck, char siu/hoisin pork, Korean BBQ, spicy Szechuan beef.

Production Method
Hand-harvested estate fruit; fermented in tronconic tanks, élevage in large foudres and some new oak; matured ~12–18 months. Estate practices organic/biodynamic viticulture.
