Perfumed mix of spiced cherry, blackberry, garrigue, violet and leather; full-bodied, velvety texture with savory, spicy finish and concentrated dark-fruit core.

Western: roast lamb, beef stew, braised short ribs, ratatouille, aged cheeses. Asian: Korean BBQ (bulgogi/galbi), char siu or roast pork, spicy Sichuan beef, miso-glazed eggplant, grilled lamb skewers.

Production Method
Estate-grown, hand-harvested; organically certified; fermented in tanks and barrels, aged ~12 months in a mix of new and used French oak barriques, foudre and tronconique tanks.
